Ingredients

Carrot Cake Chia Pudding:

  • 4 Scoops Vanilla Flavoured Protein Powder
  • ½ cup Chia Seeds
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Ground Cloves
  • ¼ teaspoon Nutmeg
  • Pinch Salt
  • 2 cup Unsweetened Almond Milk
  • 2 tablespoon Maple Syrup
  • 1 teaspoon Vanilla Extract
  • ½ cup Finely Shredded Carrot
  • 2 tablespoon Chopped Walnuts or Chopped Pecans
  • 2 tablespoon Raisins

Cream Cheese Topping Layer:

  • 2 oz Cream Cheese Softened
  • ½ cup Plain Greek Yogurt
  • 1 teaspoon Maple Syrup
  • Pinch Salt

Instructions

Chia Pudding:

  • In a medium bowl, whisk the protein powder, chia seeds, spices, and salt together.
  • Add the almond milk, maple syrup, and vanilla, whisk well to combine.
  • Finally, add the remaining ingredients, and stir well to combine.
  • Allow to sit for 20 minutes, stir again, and divide into 4 serving cups.
  • Chill for at least 2 hours.

Cream Cheese Topping Layer:

  • Whisk together all of the cream cheese layer ingredients until smooth.
  • Divide the cream cheese topping over top of the carrot cake chia seed pudding.
  • Garnish as desired, and serve immediately, or cover and chill for up for 3 days.
